Dear Sir :
We have been asked by the Grain Division, Department of Trade and Commerce, to make a statement with respect to the quality of No. 4 Northerm Wheat. Accordingly, a statement obtained from Dr. G. N. Irvine, Director of the Board of Grain Commissioners Laboratory, follows :
"This wheat, from the Atlantic coast, is currently of excellent quality for the grade and will give flour of strong baking characteristics suitable for use either by itself or in admixture with weaker flours. As compared with NO. 1 Northern wheat will give about 1% lese flour with a slightly higher ash content but of good colour. The diastatic activity will be somewhat higher than taht for No 1, but baking characteristics, including water absorption and loaf volume will be closely similar. The "W" value for the average of this grade shipped from the Atlantic during the First Qarter of the present crop year was 347.
It would be expected that the cargo shipped to Niger would be similar in its quality characteristics to the average of this grade as outlined above."
